What is Black Garlic?
Black Garlic, or “Black Gold,” is garlic that has been fermented. During the fermentation process, sugars and amino acids within garlic produce melanoidin – a dark compound responsible for creating the black color and namesake of Black Garlic.
Is it good for you?
White Garlic is a mainstay in herbal remedies and homeopathic medicine because of its abundant antioxidant properties. Chosen Foods President, George Todd, has even been known to keep pickled garlic in the staff fridge for antioxidant snacking.
Black Garlic has twice the amount of antioxidants as its younger cousin, White Garlic. Black Garlic even has additional antioxidants that are created through the fermentation process, such as S-Allylcysteine, which is water-soluble and readily digestible!
If you want to skip the science jargon – Yes, Black Garlic is even better for you than regular garlic!
What does it taste like?
Black Garlic has a rich, creamy texture and can be spread on bread like butter. It is slightly sweet and tangy, with hints of balsamic and a softened core of garlic. We usually describe it as earthy and robust.
