Chocolate Banana Quinoa Bowls

These Chocolate Banana Quinoa Bowls are a great substitute for your morning oatmeal. Simmer our Organic Royal White Quinoa with maple syrup and cacao powder for a nearly dessert-like addition to your favorite breakfast bowl toppings. Thick Greek yogurt, ripe banana, chia seeds, coconut flakes, and cacao nibs (for more chocolate-y goodness!) strike the perfect balance between healthy and satisfying.

Ingredients

For the Chocolate Quinoa

  • ½ cup uncooked Chosen Foods Organic White Quinoa
  • ¾ c filtered water
  • 1 tbsp maple syrup or honey
  • 2 tsps cacao powder
  • 1 tsp vanilla extract
  • pinch of sea salt

For assembling

  • 2 cup organic Greek yogurt
  • 1 banana sliced
  • 3 tbsp cacao nibs
  • ¼ cup sliced almonds
  • 2 tbsp unsweetened coconut flakes
  • 2 tbsp Chosen Foods Chia Seeds

Instructions

  1. Stir together the quinoa, filtered water, maple syrup, cacao powder, vanilla extract, and sea salt in a medium saucepan. Place over medium heat and bring to a simmer. Once simmering, cover with a lid and reduce the heat to medium low. Cook for 20-25 minutes, or until all the liquid has been absorbed. Remove from the heat and leave covered for 5-10 minutes. Remove the lid and fluff with a fork.
  2. To assemble the bowls, first allow the Chocolate Quinoa to cool slightly. Into wide bowls, layer the Greek yogurt, Chocolate Quinoa, banana, cacao nibs, sliced almonds, coconut flakes, and chia seeds together. Best enjoyed immediately.
